Chicken Adobo

This is a straightforward, yet tasty, recipe. I make this often on weekdays when I want something simple to eat.
Ingredients
Chicken + Marinade
- 1.5 lb boneless and skinless chicken thights
- 5 minced garlic clobes
- 1/3 cups soy sauce
- 1/2 cup white vinegar
- 3 dried bay leaves
Cooking
- 1/2 white onion
- 1.5 cups water
- 2 tbsp brown sugar
- 1 tbsp black peppercorn
Directions
- Combine chicken and marinade in bowl. Marinade for at least 20 minutes. Save the marinade for later step.
- Sear chicken in skillet until browned on each side. Remove from skillet.
- Cook garlic and onions in skillet until onions are translucent.
- Add reserved marinade, water, sugar, and peppercorn. Simmer for 5 minutes.
- Add chicken thighs smooth side down. Simmer for 15 minutes, then flip and simmer for 5-10 more minutes.
